SoBe WFF: Godiva’s Chef Chocolatier David Funaro Sweet Talks Haute Living

While several fine chocolatiers exist today, none have yet to match the quality and decadence of Godiva. And since its founding in Belgium in 1926, the unparalleled brand continues to reinvent itself through innovative recipes and the work of forward thinking pastry chefs.

Enter: David Funaro.

Initially, Chef David Funaro had plans to work in law, but today Godiva’s Chef Chocolatier shares that his flair for food derived from time spent in the kitchen with his mother; “I used to help my mother with baking, as a hobby,” said Funaro.

For the South Beach Wine and Food Festival, Funaro took part in various high profile events, including The Q, Burger Bash and The Best Thing I Ever Ate, where Funaro rubbed elbows with fellow chefs including the ultimate “skinny girl,” Bethenny Frankel. For these events, Chef Funaro concocted several savory sweet bites, including the Godiva Dark Chocolate Ganache with Cream Cheese Frosting and Decadent Godiva Red Velvet Cake Bites and the Godiva Strawberry Crème Tarte Truffle. But creating these masterful treats wasn’t the only thing that Funaro was looking forward to. “I am excited to see all of the chefs, even if I don’t know who they are exactly. It’s nice to be in their company,” said Funaro.

And when I asked the chef what his take was on the ever-so-divided dessert first debate, he advised, “just eat it!”
