You learn something new every day and today a little bird told us that it’s Peruvian Independence Day. Something that isn’t new to us, pisco. Pisco, or pisqu, meaning little bird in Peru’s native language, was popularized throughout the West Coast during the Gold Rush, and while Chile claims the spirit as its national drink as well, pisco is 100 percent Peruvian.
