1. China Poblano
Noodles and tacos get their due at this restaurant from Jose Andres at Cosmopolitan of Las Vegas. Chinese and Mexican fare live side-by-side on the menu, not interspersed. Try the pescado frito with fried fish and salsa Mexicana or the pancita al pastor, a slow-cooked pork belly with pineapple. Ceviche and gazpacho make appearances, along with chilaquiles served with tortilla chips, green tomatillo salsa and chihuahua cheese. And the prices are so low that you’ll want to order up a feast.

This slice of Baja California creates an authentic experience of street fare for diners. Executive chef Noe Alcala starts his dishes with corn tortillas made as they are ordered at Hussong’s Cantina at Mandalay Place. The elote plazero slathers grilled corn with a combination of mayonnaise and butter, smothered in cotija cheese, a genuine treat. The tacos come on homemade corn tortillas in choices such as goat meat, pork or Dorado lobster, perfect for sharing.
