Chef Russell Jackson Raises $$$ For Schools

Chef Russell Jackson is known for his diversity and boldness when it comes to cooking, and this challenge was no different.

In early March, the dissident chef took the reigns of the Lunch Break for Schools fundraiser, an event sponsored by the makers of Hidden Valley® Salad Dressings.  Chef Jackson embraced the opportunity to incorporate Hidden Valley infused food into his lunch menu at Lafitte.  A few of his most inventive creations included Cauliflower Frito with Poached Egg and Spicy Hidden Valley Ranch Dressing, Hidden Valley Ranch Panna Cotta with Shaved Fennel Salad and Hidden Valley Ranch Ice Cream in a Carrot Broth.

All proceeds of the entire Hidden Valley infused lunch menu went to support Chefs Move to Schools, raising money to support the American Culinary Federation’s efforts toward the program’s goal to encourage healthier eating by kids, including eating more vegetables.

Chef Russell joined Celebrity Chef Cat Cora and over 70 other chefs across the country to raise money to support Chefs Move to Schools and healthy eating among kids. Other participating chefs included Chef Geoffrey Zakarian (New York), Chef Suzanne Goin (Los Angeles), Chef Stephan Pyles (Dallas) and Chef Michael Kornick (Chicago), among others.
