Choose from two menu favorites: the lightly smoked Tasmanian Ocean Trout “Mi Cuit” with potato rösti, pancetta vinaigrette and pastured chicken egg or the bacon-wrapped pork tenderloin with dandelion persillade, salsify and natural jus.
