Haute Dining: 10 Questions for Chef David Diaz of Beaumarchais

Dining, drinking and dancing? It’s all possible at Brasserie Beaumarchais, which is part dining destination and part lounge. Go for Chef David Diaz’s formidable French cuisine—bouillabaisse, filet mignon, tuna tartare, roasted duck a l’orange, white anchovy and artichoke terrine—and stay for the tasty cocktails and tunes of renowned DJs.

Haute Living: What’s new at Beaumarchais?
Chef David Diaz: We have great themed parties a few times a month including the Wednesday night Cote D’ Azur parties.

HL: What are some of your favorite dishes at your restaurant?
DD: My favorites are the white anchovy and artichoke tartine, roasted baby beets and pistachio- goat cheese salad, short rib ravioli with brown-butternut squash puree and bone marrow, and finally, lobster with trumpet royale mushrooms, beet greens, fingerling potato, and lemon in a mushroom/lobster cream.

HL: Where do you like to dine when you’re not working?
DD: Different places; I like to keep it simple. Maybe Bauhaus on 14th Street and 2nd Ave, or I hit up the Grand Central Oyster Bar, which is right by my apartment.

HL:  What’s your ideal meal?
DD: Simple! My mom’s fried pork chops with rice and beans and sweet plantains. I also like a nice piece of homemade country pâté on a baguette with grain mustard and cornichons, being sure to slather the bread with the juices that have gelatinized from the pâté.

HL: Where do you like to dine on a special occasion?
DD: There are some great Brazilian churrascarias in Queens that are great for groups, and it’s a lot of meat, which I love!

HL: What’s your favorite NYC neighborhood and why?
DD: It’s got to be Queens, specifically the Jackson Heights/ Elmhurst area. Apart from the fact that I grew up there, it’s one of the most diverse places in the city, if not the country. You can get food from all over the globe, from Bangladesh to any number of Latin American countries. Everyone is represented.

HL: What do you like to do in the city on your days off?
DD: Walk walk walk! I love walking around the city. I’m constantly discovering new things. I also like to stop at food trucks and eat when walking. That’s what is great about the city.

HL: What’s your favorite vacation destination?
DD:Tulum, Mexico, and do you know why? Cochinita pibil [slow roasted pork]!! I need not say more.

HL: What’s your most memorable meal?
DD: A twelve course tasting at WD-50. It was out of this world.

HL: What are your five favorite ingredients?
DD: Coriander, thyme, nam ploy, black olives and lemon juice.
