Kahala Resort pours out ‘muddled’ cocktail menu

Like your drinks muddled or deconstructed?

The Kahala Hotel & Resort has just the menu — and just for happy hour on Fridays and Saturdays.

The luxurious resort, just 10 minutes from Waikiki, boasts a new cocktail menu at the beachside Plumeria Beach House. The menu features vintage cocktails — old classics redone — and experimental concoctions.

New cocktails include the Pineapple Basil Crush, a blend of Cruzan aged light rum, fresh lime sours, pineapple wedges and Thai basil sprigs; the Cucumber Ginger Smash, with SKYY Infusions ginger vodka, sparkling ginger ale, fresh lime sour and crunchy cucumber wheels; and the Mango Plantation, combining Absolut mango vodka, Jim Beam bourbon, pineapple juice, fresh-brewed iced tea and fresh lime sour.

“We are excited about the use of non-traditional ingredients to add more depth and complexity in our cocktail and pupu (appetizer) menu to give our guests a superlative ‘happy hour’ experience in our seaside dining facility,” said Stuart Kotake, director of food and beverage. “And besides, it’s great fun for us behind the bar and in the kitchen, too.”

Besides new signature cocktails, Kahala’s culinary team developed a new line of appetizers and small plates, including sous vide cherry tomatoes served with grilled crostini and basil aoili, chilled silked tofu with nametake mushrooms, and vegetarian soft tacos with crispy fried onion rings.
