Abattoir in Atlanta, GA, Serves: Organic

The latest dining venture to come from chefs/owners Anne Quatrano and Clifford Harrison with partner and executive Chef Joshua Hopkins. Abattoir is French for “slaughterhouse” and is an American chophouse specializing in the use of locally raised proteins to produce high-quality, affordable food. The restaurant serves freshly butchered whole fowl, fish, beef, pork and other game and the menu is based around the “whole animal cuisine” a term referring to the use of every functional piece of the animal.

Ad Hoc in Yountville, CA, Serves: American

Thomas Keller’s ad hoc, which literally means “for this purpose,” was originally intended to be just a temporary restaurant that was opened during the development of a very different concept. But, as is typically with Keller, he has such a loyal following and it was decided that it must be a permanent fixture in Yountville. Ad Hoc serves a prix fixe 4-course chalkboard menu that changes daily. Food is served family style and is described best as comfort food.
