World’s Most Expensive Egg Roll Gets Shark-Friendly Makeover

In order to support ocean sustainability, Chef Jack Lee Catering is revamping their signature dish, the world’s most expensive, one of a kind, $100 Lobster Egg Roll.

Celebrity Chef, Jack Lee, is removing shark find from all of his dishes, including the world famous egg roll, due to sustainability concerns. Chef Jack Lee Catering is an exclusive Los Angeles culinary firm known as Chinoise Cuisine that acknowledges shark fin has long been a popular delicacy in Chinese culture, however, growing global demand for the item has resulted in a sharp reduction in shark population.  As ocean predators, sharks play an important role in the marine ecosystem so Chef Jack Lee Catering has found a more environmentally friendly way to make their famed Lobster Egg Roll.

Now, the $100 egg roll is composed of Maine lobster tail, Alaskan king crab, summer black truffle and julienned nagaimo (mountain potato), baby carrot and wild baby taro root. All of this is topped with a crown of Sveruga caviar and gold leaf and paired with a fresh raspberry and 2009 Dry Creek Sauvignon Blanc reduction dipping sauce.

Chef Jack Lee Catering specializes in customized gourmet menus for celebrity events and private parties. In addition to their Lobster Egg Roll, their menu also features pistachio-crusted veal chops, lobster ravioli, filet of Kobe beef with Foie Gras, Chinoise Bouillabaisse and more. As a company they have managed events for the Oscars and Golden Globes as well as international venues. A-list clients include Oprah, Barbra Streisand, Quincy Jones and producer Mark Burnett.
