Are you a lover of Heritage meat roasting over open flames?  This weekend, Cochon will bring a feast to Charles Krug Winery to celebrate of the art of butchery and fire roasting.  This extravagant event will include 25 guest chefs, 10 all-star butchers, 2,000 lbs. of heritage meat, and enough microbrews and wine to wash it all down.

The Cochon Heratage Fire brings together chefs from the country’s top restaurants and best-in-class heritage meat: 2,000 lbs. of lamb, beef, goat and rabbit, all packed with flavor.

Local wines and brews will be on hand for tasting at the event.  In addition to butchery demonstrations, the evening will include an education on knives from Wüsthof and an “interactive experience” with Le Creuset.

This will be the second largest Cochon event of the year, featuring local chefs and butchers (John Fink of The Whole Beast, Tia Harrison of The Butcher’s Guild) and renowned national names (Josh Adams of June Restaurant in Peoria Heights, Illinois, and Joshua Applestone of New York City’s Fleisher’s Meats). Even the 2010 “King of Porc,” David Varley of Michael Mina, will be making an appearance.

VIP Tickets at $200 include a private tasting of reserve wines and artisanal cheeses.
