Haute 100 Update: Nobu Matsuhisa Opens New Restaurant in Luxurious Vail, CO Destination

Chef Nobu Matsuhisa’s ascension to greatness as a formidable culinary figure in the United States, and now globally, is an admirable story indeed. The latest culmination of his success is coming this Thursday, August 18 to Vail, CO with the opening of his 29^th restaurant, an installment of his celebrated Matsuhisa restaurants.

While his namesake Nobu restaurants can be found in cities spanning the globe, there are currently only three Matsuhisa eateries – with this new opening marking the fourth. The new Matsuhisa restaurant will be opening in swanky Vail Village’s Shops at Solaris and will serve as the sister restaurant to Matsuhisa Aspen, which has consistently been deemed as one of Aspen’s best restaurants since 1998.

Will his formal training in classical Japanese cuisine done in Tokyo, Nobu has been celebrated as one of the culinary world’s premier chefs. He combines the elements of traditional Japanese fare with a kick of South American and Western flavors, and is being received in Vail with enthusiasm.

Solaris developer Peter Knobel said, “Solaris is the new town center for Vail and Matsuhisa is the crown jewel of Solaris. We have brought world-class art and architecture to Vail and we are happy and proud to also bring a world-class restaurant to North America’s premier ski resort.”

Matsuhisa Vail will be located in the lobby space of The Solaris Residences, a part of the larger Solaris mixed-use development in the heart of Vail Village. Solaris is comprised of 79 luxury residences, 70,000 square feet of shopping, dining, and entertainment space (including a three-screen digital movie theater with full dining service), 10 bowling lanes, and an ice skating rink.
