Haute Living San Francisco March/April 2012
Ron Siegel Presentation SM
by Ron Siegal

As springtime rolled around, the Wild King Salmon season began. These fish, one of the nicer fish of the San Francisco Bay area, have had a steady decline in its population. Due to its shortage and limitation of quantity, these fish have recently become extremely hard to find. The Spot Prawns are so fresh that they’re bought live, and killed during the cooking process. This allows for their natural juices to fuse together for a delectable taste straight from the sea. Sitting on top of ravioli and complimented by fresh seasonal vegetables, this dish has a great texture and scrumptious taste. Enriched with healthy oils, this salmon is not only good, but it’s good for you. A delicacy of mine, this mouthwatering dish is one of my favorites.
