Haute Dining: Red Medicine Reinvents Vietnamese Cuisine

In the mood for “High Brow” Vietnamese? Head over to Red Medicine, the latest from a team that includes the “Umami Swami” Adam Fleischman, Jordan Kahn and Noah Ellis.
In a smartly done modern room on Wilshire, Chef Jordan Kahn is serving up his delicious interpretation of Vietnamese cuisine. If you’re looking for authentic dishes like the ones at your favorite place in Westminster, you wont find them here. What you will find is artfully crafted fresh tasting food inspired by Viet cooking. Spicy, sweet and salty goodness for the soul. The mint, the coriander the Thai chili! I love it. The food is well balanced and consistent, complex flavors abound. Start off with some Hokkaido scallop cured with lime sugar, green strawberries, coriander and wood sorrel or maybe the “Banh Mi” with foie gras . Then try the Pintade Fermier slow cooked in caramel, cinnamon, with mustard greens and coriander. Plenty of vegetables for you Vegans. The Brussel Sprouts with caramelized shallots fish sauce and vermouth was quite nice.

Red Medicine’s minimalist design was envisioned by movie production designer Charisse Cardenas. The wall panels are reclaimed barn wood and the floors are wood and polished concrete. Floor to ceiling windows frame the restaurant. The room is warm and inviting. There’s a nice bar area to have drinks and a few tables to grab some apps. My one complaint might be the noise level as hard surfaces are everywhere but all in all it’s a nice hang.
