Haute Event: Acqualina Resort’s Aaria Bar & Lounge to Host Ultimate Wine Pairing Dinner Experience

Foodies and wine aficionados, prepare yourselves. This Saturday, Feb. 19, Executive Chef James Rogers of Acqualina Resort & Spa, Miami Beach’s only AAA Five Diamond Hotel, will be hosting an intimate wine pairing dinner experience at the resort’s Aaria Bar & Lounge. Chef Rogers has spent eight years perfecting his culinary artistry and joined Acqualina in 2010 after being warmly received at Casa de Campo Resort in the Dominican Republic, the Four Seasons Resort in Costa Rica, and Miami’s own Delano Hotel.

This incredible gastronomic experience will begin behind-the-scenes with an intimate glance into the life of this amazing chef. As he discusses his interesting personal history, his passion for Spanish cuisine, and the inspiration behind the evening’s mouthwatering menu, revel in the charm of Acqualina’s elegant Mediterranean villa style and the stunning ocean view. Enjoy the scenery to a soundtrack of vivacious flamenco guitar music by Miami’s own renowned Martin Loza, and prepare yourself for rich wine varietals and a tantalizing Spanish-inspired four-course dinner.

The menu for the evening has been masterfully created by Chef Rogers to excite and satisfy even the most discerning foodie’s tastebuds. The sumptuous spread, precisely paired with wine, is wonderfully rich and indulgent. For the first course, guests will enjoy Cabrales Cheese, Frisse, and Dates wrapped in Smoked Bacon with Sherry Vinegarette. Next, a magnificent Grouper “a la plancha” with Calamari Escabeche, Squid Ink Espuma with Smoked Paprika Oil. Following that is a Rioja Braised Short Rib Crepenette with Picada, Black Olives, Capers and Piquillo Peppers and Garbanzo Puree. To wrap things up, a dessert course of Crema Catalana, a rich custard flavored with brandy and topped with a caramelized sugar crust.

“An Evening with Chef James Rogers” is the ultimate wine pairing dinner experience. Meet, greet, and welcome drink with Chef Rogers is at 7:30 p.m. and dinner seating is at 8 p.m. Cost is $95 per person, wine included. Reservations are required 72 hours in advance with full payment.
