Sustain, Miami’s New Eco-Conscious Restaurant, is Overnight Success

In December, Midtown Miami welcomed the highly anticipated Sustain Restaurant + Bar to its growing repertoire of popular restaurants. Owners Brian Goldberg and Jonathan Lazar have teamed up with Chef Alejandro Piñero to successfully create an Green-inspired eatery. The restaurant is literally eco-conscious in all facets from the ingredients down to the materials used in the design—hence the name, “Sustain.”

Chef Piñero has worked under high-profile chefs like Michelle Bernstein, as well as Chef de Cuisine at Fratelli Lyon, and Sous Chef at Casa Tua. He has delicately crafted a menu that utilizes only local, sustainable products that are prepared directly from the restaurant’s Energy Star-approved wood burning oven and appliances. “My passion is deeply tied to our drive toward sustainability,” he explains. “I’m looking forward to sharing this commitment with our customers.” The restaurant uses only meat and produce that are from local sources and sustainable producers, and their seafood complies with the Monterey Bay Fish Guide. Menu items include delicious blend of classic and modern dishes such as Sustain’s specialty “50-mile” salad, made only from ingredients that have been sourced within fifty miles of the restaurant. In keeping with the restaurant’s eco-friendly theme, Sustain also serves filtered water from an in-house filtration system.

Carl J. Myers, who is the same interior designer of Michael’s Genuine Food & Drink,  teamed up with Marcie de La Rosa to develop a tropical-style decor from all recycled and reclaimed materials. The 3,200-square-foot space has been crafted entirely using VOC-free paints and formaldehyde-free plywood, both which are 100-percent compliant with the U.S. Green Building Council/ LEED regulations. Moreover, they have also installed LED lighting throughout. And even for the seating, Tomas Frenes Design Studio constructed banquettes custom-made from reclaimed Florida Cypress wood, upholstered with Green Guard certified fabric.

So whether you are super Green-conscious or simply want to have a fresh, delicious meal, Sustain Restaurant + Bar is a welcomed addition to Midtown Miami and a must-try for 2011.
