What Made Him Haute: His establishments have defined the haute dining scene for more than a decade. In 2009, he opened DBGB Kitchen & Bar, a “lowdown downtown place where the French brasserie meets the American tavern,” and his Restaurant Daniel was awarded three stars in the 2010 Michelin Guide, the book’s highest rating.

What Makes Him Haute Now: With all the buzz over the upcoming Fashion Week, chefs and restaurants have decided to take their cuisine to the fashion- and food-hungry attendees. Boulud and fellow chef Mario Batali will provide small plates at an evening wine bar at the Bón Appétit Café at the Lincoln Center. Other chefs participating are Thomas Keller of Bouchon Bakery, Rick Bayless, Cat Corta and Christina Tossi, among others.

Boulud’s world-renowned restaurant DBGB also has plans to expand its business, adding a sidewalk café to the one-year-old restaurant. DBGB’s New American-French cuisine is known for its meat-rich menu and downtown New York City vibe. Most known for the 14 varieties of house-made sausages and the 22 craft beers on tap, the interior of restaurant serves up a variety of bar bites in an industrial style interior decor.
