Jaleo Added to the List of New Restaurants at Cosmopolitan

Spanish tapas from chef Jose Andres, who practically introduced the style of eating to Americans, now join the list of restaurants planning to open at the new Cosmopolitan Las Vegas. Andres plans to open Jaleo, a Spanish tapas bar that’s part of his ThinkFoodGroup, as well as a Chinese and Mexican restaurant that has yet to be named. He already has Jaleo, Zaytinya, Oyamel, Cafe Atlantico and minibar by jose andres, all in D.C., and The Bazaar by Jose Andres at the SLS Hotel in Los Angeles.

Cosmopolitan announced its proposed slate of restaurants in March. They include Blue Ribbon Sushi Bar & Grill from Bruce and Eric Blomberg in New York City, Scarpetta and a casual wine bar from Scott Conant from New York, Estiatorio Milos from New York restaurateur Costas Spiliadis, a steakhouse called STK from the One Group and Comme Ca from acclaimed Los Angeles chef David Myers. Cosmopolitan Chief Executive John Unwin recently told the Associated Press that there would be 13 restaurants in the hotel-casino when it’s complete.

Andres splits his time in the kitchen with television. He is the host and executive producer of “Made in Spain,” a 26-episode series on PBS that focuses on Spain’s food, wine and travel. He also makes appearances on “Top Chef” and “No Reservations” on Bravo and the Food Channel.

Cosmopolitan, which should be completed in December, is perhaps the last new casino that will open on The Strip for the foreseeable future. It sits between the Bellagio and CityCenter in the central part of The Strip with views of Paris Las Vegas and Planet Hollywood Resort across the street.
