Sushi for One. $1,000, That is.

Care for some foie gras? Are you a sushi lover? Do you have a large expense account? If you can answer ‘yes’ to all of the above, it’s time to head over to Koi. The restaurant is currently offering one of the most extravagant dishes to date: the $1,000 ‘High Roller’ foie gras sushi roll.

So what, pray tell, could possibly make this roll so ridiculously pricey? First, the chef marinates Hudson Valley foie gras and poaches it in sauterne. It is them formed into a torchon (shape) to the roll. After the roll is made, Langoustine (a sweet, succulent form of lobster) is cut into sashimi and placed on the outside of the roll. Saffron and vanilla bean butter is brushed over the lobster, while the roll is encrusted with caviar. Upon presentation, Alba truffles are carefully shaved on to the top of the roll tableside by the chef and 100-year-old balsamic vinegar is drizzled over the top.

The ‘High Roller’ is recommended only for those with an extremely discerning palate, or those who just want the privilege of saying that they have eaten a $1,000 piece of sushi. Of course, if raw fish isn’t your thang, there’s always the $1,000 omelet.
